El Jaragual: Thermal Shock - Jorge Mira
A beautiful and sweet up with notes of mango and nectarine, delicately balanced with pleasant elderflower.
El Jaragual is a 150-hectare family owned farm managed by Jorge Mira. The farm sits at 1500 MASL in the Amalfi municipality of Colombia. This region is nestled in the northern section of the central spine of the Colombian Andes mountain range and is ideal for growing high quality coffee. The coffee cultivated here is of the Caturra Varietal.
Thanks to Jorges’ experience as a forestry engineer; a mixture of pine forest plantations are being grown for sustainable timber, alongside protected plots of native forest.
The coffee at El Jaragual is oxidised for 24 hours and thereafter washed at 45 degrees celsius to induce a thermal shock. The coffee then undergoes fermantion and yeast inoculation for 68 hours. The result is a beautiful cup with sweet mango and nectarine notes balanced with a pleasant elderflower.
