Born from innovation, this coffee represents the result of years of hard work and collaboration between visionary smallholder farmers in Huila and the efforts of Qima Coffee in Colombia. 

Huila, located in southern Colombia, is a region renowned for its vibrant history, culture and coffee excellence. Benefitting from a unique combination of high altitude, volcanic soil and a variety of microclimates, the region is an ideal place for growing coffee with complex flavour profiles. Pair this with smallholder producers who strive for innovation and Qima coffee’s infrastructure and cutting-edge processing, and the result is a clean, complex coffee with a distinctly unique flavour profile.

Established in 2016, Qima was founded with a vision to create a more sustainable and equitable market for coffee in Yemen. Now, having broadened their horizons into South America, Qima Colombia is pushing the boundaries of innovation in the region and pioneering more ethical and sustainable business practices. This allows them to pay farmers a fairer share, and having invested in new production facilities, they have opened the door for a wider range of farmers to have access to advanced processing and produce more exciting coffees. 

This coffee is created from the Caturra variety, a natural genetic mutation of the Bourbon variety. This variety is popular for its high yield and ability to thrive at higher altitudes, making it one of the most popular varieties in Colombia. Caturra is well-regarded for its ability to create a bright, vibrant and clean-tasting cup of coffee.

After harvest, ripe cherries are floated, pulped and washed before being placed into sealed fermentation tanks alongside citrus fruits and select yeast cultures. Here, the fermentation is carefully monitored and temperature-controlled in order to manipulate microbial activity and impart distinct and desirable flavours into the coffee seed. After fermentation, the coffee is washed and undergoes managed drying.
