Tolima: The Birthplace of Colombian Coffee

Tolima holds historical importance as one of the early regions where coffee was introduced and cultivated in Colombia. The region's coffee heritage dates back to the 19th century, contributing significantly to the country's reputation as a top coffee producer.

Tolima is a vital coffee-growing region in Colombia known for its high-altitude farms, sustainable practices, and rich coffee heritage. Despite historical challenges, the region continues to produce some of the finest coffees, celebrated for their unique flavor profiles and quality. Coffee from Tolima has gained international recognition and awards for its quality.

Emmanuel and his family established a coffee processing centre in Colima in 2016. This centre aids over 15 villages in the Gaitania region, helping local coffee growers process their beans. In 2019; Emmanuel launched the Black Condor project. Black Condor Coffee begins its journey with a 24-hour mucilage embrace, followed by a meticulous drying process on a patio for 15 to 25 days, fostering a harmonious profile. After a stabilization period, the beans proceed to milling, resulting in a consistently exquisite coffee.

Paradise Farms

This special extended fermentation lot is sourced from producer Amarildo Jose Borges and his farm Fazenda Paraiso - Paradise Farms - in the Cerrado region. To process this lot, the cherries were fermented for 72hrs and then sun-dried on a cemented patio

"I started in coffee world in 1985 when I planted my first seven hectares. Over the years I went through financial difficulties, environmental, among others, gained experiences and overcame all adversities with my family. After going through these difficult periods, I expanded my farm, invested in structure and quality. Today my property results in high yielding harvests and exceptional flavors".
