A regional expression of Risaralda, our decaf brings together coffees from smallholder producers and preserves their character through a natural sugarcane process, delivering full flavour without compromise.

This Decaf draws on coffee from three core producers - Asocafe Tatama Santuario, El Aguila, and Entreverdes. All of these coffees are brought together in Santuario, where they are blended and prepared for milling. The result is a coffee that represents Risaralda as a whole rather than any single farm or micro-lot, creating a true expression of the region's collective character.

This coffee undergoes sugarcane ethyl acetate (EA) decaffeination, widely considered one of the most natural and flavour-preserving methods available. The decaffeination process is conducted locally in Colombia, using volcanic spring water sourced from Nevado del Ruiz and natural ethyl acetate derived from fermented sugarcane grown in Palmira.

The process begins with steaming the green coffee to increase its porosity and initiate the hydrolysis of caffeine, which in its natural state is bonded to salts and chlorogenic acid within the bean. The beans are then submerged in ethyl acetate solvent until at least 97% of the caffeine has been removed, before a final steam lifts any residual traces of caffeine from the beans.
